Cauliflower “Gnocchi” with Spinach & Prosciutto di Parma
Prosciutto di Parma adds authentic flavor to this wheat-free take on gnocchi that's low on carbs but packed with flavor.
2 slices Prosciutto di Parma, cut in half
1 bag Trader Joe’s Cauliflower Gnocchi
2 tablespoons butter
2 garlic cloves, sliced
1 thyme sprig
5 ounces spinach
Salt, to taste
In a nonstick skillet over medium heat, place prosciutto. Cook until dark red, turning halfway through, 2-3 minutes. Remove to cutting board; cool and allow it to get crispy.
Return skillet over medium heat; add gnocchi and ¼ cup water. Cover and cook until water has evaporated, about 5 minutes. Add butter, garlic and thyme; stir to combine. Cook gnocchi, undisturbed, until one side is golden brown, 4- 5 minutes.
