Grana Padano Cheese & Chive Gougères



   1 cup water
   6 tbsp butter
   ¾ tsp salt
   ¼ tsp pepper
    1 cup flour
    4 eggs
   ¼ cup chives, thinly sliced
1 ½ cup Grana Padano cheese, grated very fine


Set the oven to 425F. In a pot, bring the water, butter, salt, and pepper to a boil. Turn down heat to medium high, dump in the flour and cook for 5-7 minutes, stirring constantly until the dough pulls away easily from the sides of pot.


Put dough into a stand mixer, (or bowl if using a hand mixer), and beat for 2 minutes to release some of the steam and cool slightly. While mixing, add eggs, one at a time, till fully incorporated. Add chives and ¾ of the Grana Padano cheese and mix till fully incorporated.


Put dough into a piping bag and pipe out dollops about half the size of a ping pong ball onto a parchment lined baking sheet. Top dollops with remaining cheese and bake for 7 minutes then reduce oven to 375F and continue baking for another 20-25 minutes.
